Airport Maintenance and Braising Chicken

This weekend, my Sunday evening consisted of two things. Our most recent course was Airport Maintenance, which talked about the upkeep of airport buildings, paved areas, unpaved areas, winter operations, maintenance vehicles and equipment…and the final test is tomorrow, horrid Monday. But thank goodness for open-book tests! I’ve sticky-noted my textbook and PowerPoint notes for 19 MODULES. I’m so glad I don’t have to memorize the names of eight types of snowplows or the difference between longitudinal and transverse pavement cracks.

So to celebrate the fact that I actually studied more than 16 hours before the test time, I decided to make some chicken! My family recently received an electric pressure cooker as a gift and I was determined to be the first to use it. (I get quite excited around new kitchen appliances.) Dad just came home with groceries and a free range chicken, for which there was a recipe in the manual for the pressure cooker. I decided to take a go at it.

The first step was to clean the chicken, and I chickened out. (See what I did there? Huh? lol sorry) I’ve never been able to handle a whole raw bird; the reality of holding a limp carcass that had once freely roamed the farm lands of Abbotsford is too cruel and hits to close too home. I’m fine with precut pieces, though. Wow, I’m such a wimpy omnivore.

I was fine with the rest of the recipe after Mum washed the poor chicken, and into the cooker it went. Thirty minutes later, out it came.

I officially love this pressure cooker. The chicken is wonderfully tender, and now I have lunch ready for tomorrow after my Airport Maintenance test. The cooker is also capable of baking cakes (I know, right? It’s awesome), so maybe I’ll do that to celebrate my passing the test next Sunday. Actually, the test is on BCIT’s online learning terminal, “Desire2Learn”, and I’ll get my result right away, so maybe my cake is coming tomorrow. No pressure.
